Many people are drawn to cauliflower rice because it is lower in carbohydrates and calories than rice. It does not taste the same as rice and it does, in fact, taste like cauliflower. In this recipe, however, it is mixed with cheese and garlic powder, and will take on those flavors. Give it a try for a lower-carbohydrate meal. You can always add some cauliflower rice into your regular rice as an introduction to this new flavor. Pictured here with shrimp on top.
Ingredients
Cauliflower
- 1 large head
Oil
- 1 Tablespoon avocado, canola, sesame, peanut or light olive oil
Garlic_powder
- 1 Tablespoon
Pepper
- 1 teaspoon, ground black pepper
Cheese
- ½ cup cheddar cheese, grated (or other cheese of your choice)
Yogurt
- ½ cup plain, non-fat Greek yogurt
Spinach
- 4 cups, fresh
Herbs
- 1 teaspoon fresh herbs of your choice
Instructions
Step 1
Trim cauliflower and cut into small pieces.
Step 2
Transfer to a food processor and pulse until the cauliflower resembles the size of cornmeal or breadcrumbs. Alternately, simply finely chop by hand.
Step 3
Heat a sauté pan over medium-high heat.
Step 4
Add oil to the pan.
Step 5
Once hot, add cauliflower to the pan and season with garlic powder, salt, and pepper. Sauté until steaming, 4-6 minutes.
Step 6
Stir in yogurt using a sturdy spoon or spatula until evenly incorporated throughout the cauliflower. Add in the grated cheese and cook until it has melted (1-3 minutes).
Step 7
Add in the spinach and cook until fully wilted.
Notes
*You can find premade cauliflower rice fresh or frozen in most grocery stores.
**Cheddar cheese is great in this, but you can also try parmesan, gouda, or a blend!
